  • The all time best way to remove paste colour from your hands is with a bar of old fashioned soap! Not the lovely pumpy stuff, but simply a straightforward BAR of soap.
  • To make the cleanest cutting lines in paste and pastillage, rock a large knife back and forth and this stops the paste dragging and tearing.
  • Lakeland Plastics – shops all around the country, has the most amazing double sided waxed paper at a reasonable price. Wonderful for run outs and pressure piping.
  • To make a cake taste and look nicer when it is cut – decrust both the top and the bottom before cutting and filling.
  • To help a sponge stay moist longer, coat the bottom board in sugar paste then the sponge can draw moisture from there.
  • To stop your sponge cake drying out and rising like a volcano place a victoria sandwich tin on the top edge of your baking tin to act as a lid.
